Tabbouleh Salad with Quinoa


I made this salad on Sunday!  It is delicious and so easy!  I usually use Cous Cous but wanted to try Quinoa.  I used the Aldi brand of Quinoa, Simple Nature, and the recipe was on the back of the bag.  Here is the recipe!

1 cup Quinoa - cook according to directions.  Let chill in the fridge for about an hour.
2 tablespoons of olive oil
2 tablespoons of fresh lemon juice
Fresh mint
I added fresh diced cucumber, grape tomatoes, kalamata olives and feta cheese.  I don't add a specific amount, as much as you like!
